Yawdi's Beer Mustard Potato Salad
Ingredients
8 medium potatoes (your preference)
Salt
1 cup mayonnaise
¼ cup YAWDI’S BEER MUSTARD
1/3 cup sweet relish
1 scallion thinly sliced
1 can sweet green peas (optional)
1 can sweet corn (optional)
1 can carrots (optional)
Directions
Wash and peel potatoes and cut into 1-inch chunks (or your preference)
Put potatoes in a large pot of salted water; bring to a boil. Cook until just tender, 20-25 minutes. Drain; let cool
Stir together mayonnaise, YAWDI’S BEER MUSTARD and relish; season with salt and pepper
Fold potatoes into mayonnaise mixture.
Fold in peas, corn, carrots and scallions.
Refrigerate; covered, until ready to serve.
