Recipe: Yawdi’s Jerk Chicken
Serves 6-8
This is a traditional dish that exemplifies the authentic taste of what Jamaica is all about. Minimal marinade times with authentic results.
Ingredients
1 (5-6 lbs / 2.2-2.5 kg) chicken; either quartered or cut in half, lengthwise
1/2 cup Yawdi’s® Jerk sauce
Preparation
Using a knife make shallow cuts in the meat to help the marinade penetrate the meat better.
Place the chicken in a shallow pan or bowl and combine with Yawdi’s® Jerk sauce
Rub sauce over chicken and into the cuts made in the first point
This recipe will work well in either the oven or on the BBQ
Oven
Preheat oven to 375 F / 190 C.
Place Chicken on a greased grill.
Slow cook the chicken until meat is cooked.
Cook for about 50 minutes to 1 hour.
BBQ
Place Chicken on a greased grill over medium heat.
Close lid and grill slow cook until juices run clear.
Cook for about 45 minutes to 1 hour.
