Recipe: Yawdi’s Jerk Chicken

Serves 6-8

This is a traditional dish that exemplifies the authentic taste of what Jamaica is all about.  Minimal marinade times with authentic results.   

Ingredients

  • 1 (5-6 lbs / 2.2-2.5 kg) chicken; either quartered or cut in half, lengthwise

  • 1/2 cup Yawdi’s® Jerk sauce

Preparation

  • Using a knife make shallow cuts in the meat to help the marinade penetrate the meat better.  

  • Place the chicken in a shallow pan or bowl and combine with Yawdi’s® Jerk sauce

  • Rub sauce over chicken and into the cuts made in the first point

This recipe will work well in either the oven or on the BBQ

Oven

  • Preheat oven to 375 F / 190 C.

  • Place Chicken on a greased grill.

  • Slow cook the chicken until meat is cooked.

  • Cook for about 50 minutes to 1 hour.

BBQ

  • Place Chicken on a greased grill over medium heat.

  • Close lid and grill slow cook until juices run clear.

  • Cook for about 45 minutes to 1 hour.
